When Pooja Bavishi set out to establish her ice-cream business, Malai, she was able to do so with an unambiguous, personal view. "I launched Malai as I was looking to celebrate the flavors that I grew up eating as a first generation Indian American in a popular and mainstream manner," she says.

"Everyone is a victim of an ice cream moment from their childhood and it is almost always related to visiting your local ice cream shop for a treat and a cup of ice cream with beloved people," Pooja says. This nostalgia-infused fusion can be seen in Malai from being a stand-in in markets and local food halls to freezers in grocery stores, pop-up carts around New York City, and a bustling flagship location located in Brooklyn offering local and national delivery.
